These rich, savory scones are ideal for a weekend brunch or as an accompaniment to a light meal of soup or salad.


BEFORE YOU START: Preheat the oven to Bake 375°F.

Yield: 6 to 8 servings (approximately 16 scones)

Ingredients
Scones
2 cups all-purpose flour

⅔ cup whole wheat flour

1 teaspoon salt

2¾ teaspoons baking powder

½ cup (1 stick) unsalted butter, diced, very cold

5 ounces ham, diced small (about 1 cup)

2½ ounces shredded Gruyère cheese (about 1 cup)

¼ cup finely chopped chives

1 cup heavy cream

2 eggs

Egg Wash and Cheese Topping
1 egg

1 tablespoon heavy cream

¾ ounce shredded Gruyère cheese (about ¼ cup)

Preparation Method

Scones:

  1. In a large bowl, combine flours, salt and baking powder and stir with a fork.
  2. Add the butter and, using a pastry cutter or hands, work into the dry ingredients until the butter is pea-sized and well-incorporated.
  3. Add the ham, cheese and chives, and stir with a fork.
  4. In a large measuring cup, mix cream with eggs.
  5. Add the cream mixture to the bowl and stir with a fork.
  6. Use your hands to pull the dough together and knead gently to form into a large disc.
  7. Chill the dough for 10 minutes.
  8. Use your hands to form the dough into small (2-inch) spheres, about 16 scones.
  9. Place half the scones on a baking sheet and press down on scones to flatten slightly.
  10. Bake the scones until risen and golden brown, 16-18 minutes.  Repeat with remaining scones

Egg wash and cheese topping:

  1. In a small bowl, combine egg and heavy cream and stir with a fork.
  2. Brush the scones all over with egg wash.
  3. Sprinkle with cheese.
