Chicken Breasts, 2 lbs, cut into 1/2" cubes

6 cherry tomatoes

6 mushrooms

1 red bell pepper, cut into 1/2" cubes

1 green bell pepper, cut into 1/2" cubes

1 red onion, cut into 1/2" cubes

1 tablespoon olive oil

1/2 bunch parsley, chopped

1/2 lemon

6 wooden skewers

Salt and pepper, to taste

Preparation Method

  1. Preheat Wolf outdoor grill on medium high heat for 10 minutes.
  2. One day prior soak the wooden skewers in water to keep them from burning on the grill.
  3. In a medium bowl combine the chicken, parsley, oil and season with salt and pepper.
  4. To make the brochettes, alternate the chicken, peppers and onions on a wooden skewers.  Top the skewers with a tomato and a mushroom. Continue the process to make 6 brochettes.
  5. Place the brochettes onto the grill grates and let cook for 3 minutes on each side, while closing the door in between turns.
  6. Remove from the grill and place onto serving platter. Squeeze the lemon juice over the brochettes and serve.
