Crust:

1 1/2 cups flour

1 cup shredded coconut

1/2 cup powdered sugar

1/2 teaspoon salt

3/4 cup unsalted butter, at room temperature

Filling:

1/2 cups sugar

3 eggs

2 1/2 teaspoons baking powder

2 tablespoons key lime juice

2 tablespoons lime juice

1 tablespoon lime zest

Preparation Method

  1. Preheat Wolf oven in Convection at 325°F.
  2. In a mixer, beat together flour, shredded coconut, powdered sugar and salt.
  3. Add softened butter and beat on low speed until crumbly.
  4. Press into a greased 9 x 13 pan.
  5. Bake in preheated oven for 15-18 minutes, or until lightly golden brown.
  6. Remove and place on a rack to cool to room temperature.
  7. Increase oven temperature to 340°F.
  8. To make filling, in a small bowl, whisk together sugar, eggs and baking powder until smooth.
  9. Add in lime juices and zest and whisk until well combined.
  10. Pour mixture over cooled crust.
  11. Bake for 20-25 minutes, or until deep golden brown and well set.
  12. Remove from oven, cool and refrigerate overnight to fully set.
  13. Cut and serve the next day.
