5 pounds boneless, skinless chicken thigh meat1/4 cup canola oil
1/2 medium onion, finely diced
1/2 jalapeno pepper, seeded and finely diced
1 tablespoon Cajun seasoning
1 1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
1 cup BBQ sauce
1 tablespoon chipotle Tabasco

Preparation Method
- In large braising pan on Wolf cooktop over high heat, cook the chicken with the onion, jalapeno, Cajun seasoning, salt and pepper. Stir frequently for 10 minutes.
- Turn heat down to medium and cook for an additional 10 minutes.
- Reduce heat, and simmer for about an hour, stirring often to break up chicken.
- When liquid has all but cooked off, add BBQ sauce and chipotle Tabasco. Adjust seasoning with additional salt or Tabasco.
